Baking soothes the spirit

I love baking, it soothes my soul. If everything is a complete mess, or I don't know what else to do, I will bake bread. Something about kneading the dough, and the wafting scent of bread in the oven lifts me up.

Anyway, today I didn't bake bread, but I did bake a cake using a recipe from a mate who inherited it from a great aunt or something. It is the easiest recipe I have ever seen for a cake baked from 'scratch', "idiot proof" according to Kelly (my mate) and passed the kid test...

I have in the past made wonderful, fabulously healthy cakes that have been gobbled by the grown-ups but disdained by the children. This is a winner on all counts - reasonably healthy and very very yummy. It ends up with a consistency of sponge, with a slight banana taste. You can substitute oat, rice or soy milk for the cows milk.

Because I can't reasonably write about how delicious the cake is without passing on the recipe, here it is. Enjoy!

Banana cake

2 - 3 bananas mashed into 3/4 cup of soft brown sugar
1/4 stick of butter (melted is easier)
1/2 teaspoon bicarbonate of soda in 1/2 cup of milk
1 beaten egg

mix all the above ingredients together then fold in
1 1/2 cups of self raising flour

Bake in a cake round or loaf for around 40 minutes at 200 degrees C, 20 minutes if using muffin tray.

Cover with icing of your choice, or eat plain. Try not to eat it all at once, it is just as nice cold as it is hot out of the oven.

Sounds a good way to use up bananas if the flambé isn't appreciated.

Some other great ideas for short term stress relief are:

Going for a short walk
Play some light sport
Read an interesting book
Go see a film - preferably a comedy
Visit a friend a good listener
Listen to your favourite music
Hug someone - this gives me instant relief

Do anything that will give you some time out and relief from the way you are feeling. Don't dismiss them because they appear too simple. It's the simple things in life that are often the best.

However it is essential to get to the core of what is causing your stress and anxiety, unfortunately it won't go away on its own.

Thanks for your comment - they too are all wonderful stress relievers, and yes - getting to the core of what is provoking the stress or anxiety is rather essential too...I just wanted to share the cake recipe, and a little story got attached to it haha. xo
